1 cup pumpkin, pureed, canned or fresh
½ cup cashews
2 tbsp maple syrup
2 tbsp coconut oil, melted
½ tsp pumpkin pie spice
Soak cashews for 2 hours if you don’t have a high speed blender
Blend everything together until smooth
Refrigerate 2-3 hrs til firm
This is fabulous on its own, but imagine it on a ginger cookie base for pie. Or a filling between two chewy oatmeal cookies. YUM! My mouth is watering already
