Let’s lighten things up and end this month on a delicious note.

Pumpkin Lentil Curry

Pumpkin Lentil Curry

2 cans chickpeas, drained & rinsed

2 cups veggie stock

1 onion, chopped

1 cup red lentils, dry

1 cup pumpkin puree (NOT pumpkin pie mix)

1 tbsp curry powder

¼ tsp cayenne

1 tsp sea salt

1 large can coconut milk (or 2 small cans)

  • Mix everything but coconut milk into slow cooker

  • High 4-6 hrs; Low 8 hrs

  • Add coconut milk at the end

  • Serve with cooked brown rice

  • Optional: add in fresh cilantro and 1 tbsp lime juice


If you want this faster, mix everything into a large pot (except coconut milk). Bring to boil, turn down to medium and cook 30 minutes, Stirring occasionally. Make rice in a separate pot at the same time. Top with chopped cilantro and a splash of lime juice

This is such a cozy dinner, full of protein and fiber, but keeps you feeling good. I had this last night and boy, was it GOOD!😋
