Now it’s time to celebrate with a healthy (make ahead) salad.
Adapted from Going Raw by Judita Wignall
2 cups wild rice, cooked
1 cup corn, thawed
½ cup bell peppers (mix), chopped
1 cup spinach, chopped
2 tbsp olive oil
2 tbsp lime juice
1 tsp cumin
Pinch hot pepper flakes
Sea salt to taste
1 jalapeno, minced (Optional)
Cook wild rice 1 cup dried rice 2 cups water, boil and turn to low about 45-60 minutes
Chop all veggies and mix into a bowl
Great for lunch, a side dish at supper or a light, filling meal on its own
Lasts 3-4 days in the fridge covered
