Cozy up with a big bowl of delicious white chili
Introduction:
White chili is a lovely twist on the classic tomato based chili. So if you are following FODMAP diet or avoiding nightshades, this is for you. You can make it as mild or spicy as you'd like.
Enjoy this gentler version of chili. Still just as good. And it doesn't even take too long to make, so that you can have energy for what you want to do.

Now it’s time for a cozy winter dinner for all of your hard work. Plus this is a one pot meal (it could even be made in the crock pot to make it even easier) so it won’t use up too much energy.
White Chili
1 onion, chopped
1 clove garlic, minced
1 cup bell peppers, chopped
1-2 jalapenos, small chopped
1 tbsp olive oil
2-3 tbsp chickpea flour
1 cup milk of choice
3-4 cups chicken stock or water
1 can navy beans, drained and rinsed
1 cup frozen corn
2 tbsp cilantro, chopped
2 chicken breasts chopped ( 1 ½ cups leftover turkey or chicken chopped)
1 tsp sea salt
- In a large pot add onion, garlic, peppers, olive oil and raw chicken if using
. - Heat on medium high, stirring often til onions are soft
Add beans and stock or water
Simmer 1-2 hours
- Mix flour and milk into a jar and shake until combined (add leftover turkey or chicken here if using)
Turn heat to medium low and let simmer for 30 minutes. Stirring often
- Add frozen corn and cilantro before serving
Crock Pot:
Place everything except milk/flour mixture and cilantro into slow cooker select cook time
- Mix flour and milk into a jar and shake until combined (add leftover turkey or chicken here if using) add in the last half hour
Variations:
Omit chicken/turkey and stock
Add shredded cheese at serving
Use yogurt, sour cream or cashew cream instead of milk
Adjust spiciness ( add hot pepper flakes and or 1 tsp cumin for more heat)
