Easy One Pot Chili for Fibro Fighters

January 28, 20242 min read

Cozy up with a big bowl of delicious white chili

White chili is a lovely twist on the classic tomato based chili. So if you are following FODMAP diet or avoiding nightshades, this is for you. You can make it as mild or spicy as you'd like.

Enjoy this gentler version of chili. Still just as good. And it doesn't even take too long to make, so that you can have energy for what you want to do.

Hello Beautiful!

Wow! we’ve been on quite a journey together. Emerging from your old life into the best version of you for the past several weeks. And you’re still here! Take a moment to reflect and celebrate all of the work you've  done over the past month. 💞

White Chili

Now it’s time for a cozy winter dinner for all of your hard work. Plus this is a one pot meal (it could even be made in the crock pot to make it even easier) so it won’t use up too much energy.

1 can navy beans, drained and rinsed

1 cup frozen corn

2 tbsp cilantro, chopped

1 tsp sea salt

 - In a large pot add onion, garlic, peppers, olive oil and raw chicken if using

. - Heat on medium high, stirring often til onions are soft

  • Add beans and stock or water

  • Simmer 1-2 hours

 - Mix flour and milk into a jar and shake until combined (add leftover turkey or chicken here if using)

Turn heat to medium low and let simmer for 30 minutes. Stirring often

Crock Pot:
