Introduction:

With all of this talk of sleep lately, I’ve got a cozy side dish for you to try. It’s full of fiber, vitamin A and so healthy for you.

This wonderfully tasty and cozy side dish is sure to be a hit and won't use too much energy either!

Hello Beautiful!

Twice Baked Sweet Potatoes

3-4 sweet potatoes (leave skin on)

1-2 apples, chopped

¼ cup butter

1/4 cup pecans, if desired for topping

  • Prick the skins of sweet potatoes with a fork several times

  • Bake 350 F 45-60 min til soft

  • Chop apples into oven proof dish (no need to peel, just wash apples)

  • Scoop out cooked sweet potato into oven proof dish

  • Add butter

  • Bake 350 F 30 min

  • Top with chopped pecans if desired

A New Favourite

This is one of my favourite side dishes for Thanksgiving or Christmas and it’s always a huge hit. Plus it’s so easy to do and uses very little effort. Bonus, you won’t have to use your new found energy that you’ve found this month by sleeping better on food prep. Bon Appetit!
