A delicious filling salad for lunch, a light dinner or a great side dish. Plus it's make ahead so wins all around!

Have you tried this tasty salad? And it's make ahead so you can make it when you have the most energy.

Yahoo!!! You are doing awesome at starting small, being consistent and planning and pacing your energy to fit your days. Way To Go!!!🥳🥳

Now it’s time to celebrate with a healthy (make ahead) salad. 

Mexican Wild Rice

Adapted from  Going Raw by Judita Wignall

2 cups wild rice, cooked

1 cup corn, thawed

½ cup bell peppers (mix), chopped

1 cup spinach, chopped

2 tbsp olive oil

2 tbsp lime juice

1 tsp cumin

Pinch hot pepper flakes

Sea salt to taste

1 jalapeno, minced (Optional)

  • Cook wild rice 1 cup dried rice 2 cups water, boil and turn to low about 45-60 minutes

  • Chop all veggies and mix into a bowl

  • Great for lunch, a side dish at supper or a light, filling meal on its own

  • Lasts 3-4 days in the fridge covered
