Our theme for this month is communication. We’ve covered a lot of ground, but this week I wanted to share another recipe with you, to support your fibromyalgia.

Healthy Salad for Fibro Warriors

Sometimes it can be challenging to eat well, but this salad will help-it's filling and nutritious. You may even have enough leftovers for a few days!

Hello Beautiful!

This is such a customizable  salad that you could come up with a different bowl every day! Sometimes with fibromyalgia, it’s hard to have the energy to prepare healthy foods. This one is easy to prepare and makes enough for several meals.

The Buddha Bowl

The Buddha Bowl is simple, yet so filling. Here are the basic components:

Some Ideas to Get You Started

Leafy greens of choice

kale, thinly sliced, baby bok choy, collard greens thinly sliced, spinach or spring mix

Proteins of choice

Nuts, cooked meat or chicken, tuna or salmon, beans, chickpeas, tofu

Grain, cooked

Brown or wild rice, quinoa, millet, buckwheat, amaranth 

Veggies crunchy, raw

Peppers, cucumber, red onion, purple cabbage, shredded carrots, broccoli, corn, peas, radish, fennel

Fruit

Berries, oranges, grapefruit, apple, mango, pineapple, peach, dried cranberries, dates, figs

Sauce, thick and creamy

Spicy, Asian, Herby, Fruit Vinaigrette, Tahini, Hummus 

Soft veggies (roasted)

Sweet potato, beets, avocado (fresh, not roasted), tomatoes

Instructions

Cook what needs to be cooked. Mix everything into a bowl. Add the sauce at serving. If there are leftovers, the salad will last 2-3 days with the sauce on it; up to a week if the salad and sauce are stored separately. 

Use your imagination. The sky’s the limit with this fun, flavourful, healthy and so delicious salad. There is also no shame if you need to buy pre cut veggies and pre-cooked meat if that makes it easier for you to enjoy healthy good food. If you run out of ideas or don’t know where to start, check Pinterest or the internet for recipes– there’s tons!! Buddha bowls are filling, healthy and one of my favourites.
